vEMI-Cheese Yield guides the plant through critical real time decisions while each vat is made. A daily graph of theoretical yield is maintained against the actual weight of the cheese blocks produced. A simple click shows the vat details and its contribution to the day's totals. Contributions of milk and milk components, starter, and rennet are maintained. The amount of fat, solids, and protein are visible to the manufacturer in real time. Each formula can be visibly adjusted to suit the customer's method for cheese yield analysis and costing.
